Salmon tray bake with kūmara and greens

A recipe idea, not nutrition advice.

One tray, one oven. The kūmara goes in first and the salmon joins it for the last 12 minutes.

What you'll need

Serves 4 · about 35 minutes

  • →2 medium kūmara, cut into wedges
  • →2 handfuls of broccolini or green beans
  • →1 lemon, sliced
  • →2 tablespoons olive oil
  • →Salt and black pepper

How to make it

  • 1.Heat the oven to 200 °C. Toss the kūmara in half the oil, season, and roast for 20 minutes.
  • 2.Push the kūmara to the sides, add the salmon, greens and lemon slices, drizzle with the rest of the oil and season.
  • 3.Roast for 10–12 minutes more, until the salmon is opaque and flakes easily.
The ingredients: salmon fillets, kūmara, broccolini and lemon.
